Peel the potatoes and cut them into small chunks (See Note 1)
Heat a pan with oil for deep frying until medium-hot (See Note 2)
Deep fry the chopped potatoes for 5 minutes until lightly browned and set aside.
In a separate frying pan add 50g butter and let it melt.
Once melted, add 3 cloves of garlic and crushed chilli, and sauté for 1 minute, don’t brown them too much. (See Note 3)
Add the onions and red bell pepper and cook on medium heat for 2-3 minutes until softened.
Add the spices and cook for 2-3 minutes on medium heat.
Add the spinach and cook for 2-3 minutes.
Add the fried potatoes and stir until everything is well combined, mix and cook for 1-2 minutes to make the potatoes crispy.
Serve as a side or main with rice or naan bread.
