Ingredients

  • 4 Chicken Breasts
  • 2 tbsp Olive Oil
  • 1 Onion Finely Chopped
  • 3 cloves Garlic Minced
  • 1 tsp Italian Herbs Dried
  • 200 g Cherry Tomatoes Halved
  • 150 g Spinach Fresh
  • 200 ml Double Cream
  • 50 g Parmesan Cheese Grated
  • Salt And Black Pepper To taste
  • Basil Leaves Fresh for garnish

Instructions

  • Begin by seasoning both sides of the chicken breasts with salt, black pepper, and dried Italian herbs.
  • Heat some olive oil in a large skillet over medium-high heat. Place the seasoned chicken breasts in the skillet and cook them for approximately 6-7 minutes on each side until they are fully cooked and acquire a golden-brown crust. Once done, transfer the chicken from the skillet and set it aside.
  • In the same skillet, add finely chopped onion and minced garlic, and sauté them for about 2-3 minutes until the onion turns translucent.
  • Introduce halved cherry tomatoes to the skillet and cook them for another 2-3 minutes until they begin to soften.
  • Add fresh spinach to the skillet and cook until it wilts, typically taking around 2 minutes.
  • Pour in double cream and grated Parmesan cheese, stirring thoroughly. Allow the mixture to simmer for 2-3 minutes to let the sauce thicken.
  • Place the cooked chicken breasts back into the skillet, spooning some of the creamy sauce over them. Heat the chicken through for an additional 2-3 minutes.
  • Before serving, garnish with fresh basil leaves.
