Preheat your oven to 200°C (180°C fan).
Roll out the puff pastry sheets on a floured surface and cut them into 12 equal rectangles. Place them on a baking sheet lined with parchment paper.
Bake the pastry rectangles in the preheated oven for about 15-20 minutes or until they are puffed up and golden brown. Allow them to cool completely.
While the pastry is cooling, prepare the filling. In a mixing bowl, whip the double cream with the icing sugar and vanilla extract until it forms stiff peaks.
Once the pastry has cooled, spread a generous dollop of whipped cream on top of the pastry.
Add a layer of sliced strawberries on top of the cream.
Place another pastry rectangle on top to create a sandwich. Repeat this process with the remaining pastry, cream, and strawberries.
Dust the top of each Napoleon with a little icing sugar and garnish with cream and strawberries.
Serve your Strawberry Napoleons immediately or refrigerate for a short time before serving.
