Ingredients

  • 4 Chicken Breasts skinless and boneless
  • 2 tbsp Olive Oil
  • 4 cloves Garlic minced
  • 1 Onion finely chopped
  • 200 ml Double Cream double cream
  • 50 g Butter butter
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • Salt to taste
  • Black Pepper to taste
  • Parsley chopped, for garnish

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken breasts with salt and black pepper on both sides.
  • Place chicken breasts in the skillet and cook until golden brown on each side, about 5-6 minutes per side.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  • Add butter to the skillet and allow it to melt.
  • Add finely chopped onion and cook for about 3-4 minutes until softened.
  • Pour in the double cream, dried thyme, and dried rosemary. Stir to combine.
  • Bring the mixture to a simmer and then reduce the heat to low.
  • Return the chicken breasts to the skillet, spooning the creamy garlic butter sauce over them.
  • Simmer for another 5-7 minutes until the chicken is cooked through and the sauce has thickened.
  • Garnish with fresh chopped parsley before serving.
