600gPotatoeswashed and diced into bite-sized pieces
2tbspOlive Oil
1Lemonzest and juice
1tspBlack Pepper
1tspSea Salt
Parsleyfresh finely chopped, for garnish (optional)
Instructions
Preheat the oven to 200°C (180°C fan-assisted).
In a large bowl, toss the diced potatoes with olive oil, lemon zest, black pepper, and sea salt until evenly coated.
Spread the seasoned potatoes in a single layer on a baking tray lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, stirring halfway through.
Once cooked, remove from the oven and drizzle with lemon juice.
