In a large saucepan, combine the chopped apricots, brown sugar, apple cider vinegar, chopped onion, minced garlic, grated ginger, mustard seeds, chilli flakes, ground cinnamon, ground cloves, and a pinch of salt.
Stir the mixture well to combine all the ingredients.
Place the saucepan over medium heat and bring the mixture to a simmer.
Reduce the heat to low and let the chutney simmer gently for about 45 minutes, stirring occasionally, until it thickens to a desired consistency.
Once thickened, remove the saucepan from the heat and let the chutney cool slightly.
Transfer the apricot chutney to sterilised jars and seal tightly.
Allow the chutney to cool completely before refrigerating.
Serve the apricot chutney with cheese, meats, or as a condiment with your favourite dishes.
