Ingredients

  • 500 g Apricots pitted and chopped
  • 200 g Brown Sugar
  • 150 ml Apple Cider Vinegar
  • 1, Onion finely chopped
  • 2 cloves Garlic minced
  • 1 tbsp Ginger fresh, grated
  • 1 tsp Mustard Seeds
  • 1/2 tsp Chilli Flakes
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Ground Cloves
  • Pinch of Salt

Instructions

  • In a large saucepan, combine the chopped apricots, brown sugar, apple cider vinegar, chopped onion, minced garlic, grated ginger, mustard seeds, chilli flakes, ground cinnamon, ground cloves, and a pinch of salt.
  • Stir the mixture well to combine all the ingredients.
  • Place the saucepan over medium heat and bring the mixture to a simmer.
  • Reduce the heat to low and let the chutney simmer gently for about 45 minutes, stirring occasionally, until it thickens to a desired consistency.
  • Once thickened, remove the saucepan from the heat and let the chutney cool slightly.
  • Transfer the apricot chutney to sterilised jars and seal tightly.
  • Allow the chutney to cool completely before refrigerating.
  • Serve the apricot chutney with cheese, meats, or as a condiment with your favourite dishes.
