Instructions
In a large mixing bowl, combine the flour and salt.
In a separate bowl, mix the yeast with the warm water and olive oil. Allow it to sit for a few minutes until foamy.
Pour the yeast mixture into the flour mixture and mix until it forms a dough.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Preheat the oven to 200°C (180°C fan) or Gas Mark 6.
Punch down the risen dough and divide it into 12 equal portions. Roll each portion into a long rope shape and place them on a lined baking tray.
In a small bowl, mix together the melted butter and minced garlic.
Brush the garlic butter over the top of each breadstick.
Sprinkle the grated mozzarella sover the breadsticks, then sprinkle with dried oregano.
Bake in the preheated oven for 12-15 minutes, or until the breadsticks are golden brown and the cheese is melted and bubbly.
