Combine whole wheat flour, salt, and vegetable oil in a mixing bowl.
Gradually add water into the mixture and knead until the dough becomes smooth and flexible. Cover it with a damp cloth and allow it to rest for 30 minutes.
In a separate bowl, combine grated cheddar cheese, finely chopped green chilies, red chili powder, garam masala, cumin powder, coriander powder, turmeric powder, and fresh coriander leaves.
Divide the dough into equal portions and shape each portion into a ball.
Flatten one of the dough balls into a circle, place a portion of the cheese mixture in the centre, and fold the edges to seal it. Roll it out again to form a paratha.
Heat a griddle or tawa over medium heat and cook the paratha on both sides until it turns golden brown, adding a small amount of oil or ghee as needed.
Repeat the process with the remaining dough balls and cheese mixture.
Serve the parathas hot, accompanied by yoghurt or chutney.
