Preheat your oven to 160°C (325°F) and line a baking tray with parchment paper.
In a mixing bowl, combine the desiccated coconut and caster sugar.
In a separate bowl, whisk the egg whites until they form stiff peaks.
Gently fold the whisked egg whites into the coconut and sugar mixture. Add the vanilla extract and a pinch of salt. Mix until well combined.
Using your hands or a spoon, shape the mixture into small mounds and place them on the prepared baking tray.
Allow the macaroons to rest for about 30 minutes to let them set.
Bake in the preheated oven for 15 minutes or until the macaroons turn golden brown.
Remove from the oven and let them cool on the tray for a few minutes before transferring to a wire rack to cool completely.
Once cooled, your delicious Coconut Macaroons are ready to enjoy!
