Begin by seasoning both sides of the chicken breasts with salt, black pepper, and dried Italian herbs.
Heat some olive oil in a large skillet over medium-high heat. Place the seasoned chicken breasts in the skillet and cook them for approximately 6-7 minutes on each side until they are fully cooked and acquire a golden-brown crust. Once done, transfer the chicken from the skillet and set it aside.
In the same skillet, add finely chopped onion and minced garlic, and sauté them for about 2-3 minutes until the onion turns translucent.
Introduce halved cherry tomatoes to the skillet and cook them for another 2-3 minutes until they begin to soften.
Add fresh spinach to the skillet and cook until it wilts, typically taking around 2 minutes.
Pour in double cream and grated Parmesan cheese, stirring thoroughly. Allow the mixture to simmer for 2-3 minutes to let the sauce thicken.
Place the cooked chicken breasts back into the skillet, spooning some of the creamy sauce over them. Heat the chicken through for an additional 2-3 minutes.
Before serving, garnish with fresh basil leaves.
