Begin by preheating your oven to 200°C (180°C fan/gas mark 6).
Take a large mixing bowl and combine the potato chunks, minced garlic, dried rosemary, salt, and black pepper.
Drizzle the olive oil over the potato mixture and toss everything together until the potatoes are thoroughly coated with the oil and seasonings.
Spread the well-seasoned potatoes evenly on a baking tray.
Roast them in the preheated oven for approximately 30-35 minutes or until the potatoes turn crispy and achieve a golden brown colour. Remember to stir occasionally for even cooking.
Once they’re ready, remove the garlic-infused roasted potatoes from the oven and serve them while still hot. Enjoy!
