Preheat the oven to 200°C (180°C fan).
In a large bowl, combine the olive oil, minced garlic, paprika, dried oregano, salt, and black pepper.
Add the potato wedges to the bowl and toss well to ensure they are evenly coated with the oil and spice mixture.
Arrange the coated potato wedges in a single layer on a baking tray lined with parchment paper.
Bake in the preheated oven for 35-40 minutes, turning them halfway through, until they are golden brown and crispy.
Once cooked, remove from the oven and sprinkle with fresh parsley before serving.
