Preheat your oven to 200°C (400°F).
In a large bowl, combine minced garlic, olive oil, salt, and black pepper.
Add cubed potatoes to the bowl and toss them until they are thoroughly coated with the garlic mixture.
Transfer the coated potatoes to a baking dish, spreading them out in a single layer.
Place the baking dish in the preheated oven and roast the potatoes for approximately 40 minutes, or until they turn golden brown and crispy. Make sure to stir them occasionally for even cooking.
Once the potatoes are fully cooked, take them out of the oven and sprinkle freshly chopped parsley over them.
Gently toss the potatoes to evenly distribute the parsley.
Serve the roasted garlic potatoes hot as a delectable side dish.
