Ingredients

  • 200 g Gram Flour
  • 1 tsp Sugar
  • 1/2 tsp Turmeric Powder
  • 1 tsp Lemon Juice
  • 1 tsp Salt
  • 1 tsp Eno Fruit Salt
  • 2 tbsp Oil
  • 1/2 tsp Mustard Seeds
  • 1/2 tsp Cumin Seeds
  • 1/2 tsp Sesame Seeds
  • 1-2 Green Chilies Chopped
  • 1/2 inch Ginger Grated
  • 1 pinch Asafoetida
  • 2-3 Curry Leaves
  • Coriander Chopped for garnish

Instructions

  • In a mixing bowl, add gram flour, sugar, turmeric powder, lemon juice, and salt. Mix them well.
  • Add water gradually and whisk to form a smooth batter. Ensure there are no lumps.
  • Grease a steaming dish or a thali with oil.
  • Add Eno fruit salt to the batter and mix gently. You’ll see it froth up.
  • Immediately pour the batter into the greased dish.
  • Steam the batter for about 15-20 minutes or until a toothpick inserted comes out clean.
  • Once done, let it cool down for a while and then cut it into squares or diamonds.
  • In a small pan, heat 2 tablespoons of oil. Add mustard seeds and let them splutter.
  • Add cumin seeds, sesame seeds, green chilies, ginger, asafoetida, and curry leaves. Sauté for a minute.
  • Pour this tempering over the steamed dhokla pieces.
  • Garnish with chopped coriander leaves.
  • Serve the Khaman Dhokla with green chutney or tamarind chutney.
