In a bowl, combine the olive oil, minced garlic, paprika, ground cumin, ground coriander, salt, pepper and lemon juice.
Add the cubed lamb meat to the bowl and mix until it’s evenly coated with the marinade. Cover the bowl with plastic wrap and leave it in the fridge to marinate for at least 2 hours, or overnight.
If you are using wooden skewers, soak them in water for at least 30 minutes before using.
Preheat your grill or grill pan to medium-high heat.
Thread the lamb meat onto the skewers.
Grill the kebabs for 15-20 minutes, turning them occasionally, until the meat is cooked to your desired level of doneness.
Serve the kebabs hot with some pita bread, a side salad and some tzatziki sauce.
