Spread the sirloin steak onto a flat surface – if the steak is frozen, remove and allow it to rest at room temperature for at least an hour.
Drizzle olive oil onto the sirloin steak then sprinkle on salt, black pepper, and garlic powder and gently massage into the steak using the tips of your finger.
Turn the steak over and repeat step 2 on the other side of the steak.
Heat up the pan on medium until hot then place the steak onto the pan and cook depending on your preference – for a rare steak cook each side for 2-3 minutes on either side, for a medium steak cook each side for 4 minutes on either side, for a well-done steak cook for 5-6 minutes on either side.
Flip the steak over and put a cube of butter in the middle and allow it to melt over the steak then baste over the steak.
Remove from pan and allow to rest for 5 minutes before serving with a dash of béarnaise sauce and steak chips.
