Filling 500 g Cherries Frozen and pitted 150 g Sugar 1 tsp Almond Extract ¼ tsp Ground Allspice Topping 60 g Pastry Flour Whole Wheat 100 g Sugar 40 g Plain Flour 1 tsp Baking Powder ¼ tsp Salt 2 large Eggs 100 ml Milk 2 tbsp Bourbon Extract 2 tsp Lemon Peel Finely grated 1 tsp Vanilla Extract
Preheat the oven to 180°C (350°F) Gas mark 4.
Butter an 11x7x2-inch baking dish.
In a large bowl combine the ingredients for the filling; toss well.
Spread the filling evenly in the prepared dish.
In a separate bow whisk the dry ingredients for the topping.
Then gently stir in the wet ingredients for the topping.
Spoon the topping mixture over the filling.
Bake the cobbler until topping is golden brown and juices from filling are bubbling thickly at edges, about 50 minutes.
Serve cobbler warm with ice cream or whipped cream.
