In a large mixing bowl, blend together the warm water, sugar, and yeast. Allow it to rest for about 5-10 minutes until it develops frothiness.
Incorporate the olive oil and 2 tsp of salt into the yeast mixture.
Gradually introduce the flour while continuously mixing until a dough is formed.
Work the dough on a lightly floured surface for approximately 5-7 minutes until it achieves a smooth and elastic consistency.
Position the dough within a greased bowl, cover it with a damp cloth, and allow it to proof for 2 hours or until it has doubled in size.
Prepare the Tomato Sauce:
In a small saucepan, unite the crushed tomatoes, minced garlic, 1 tsp of dried basil, 1 tsp of dried oregano, salt, and pepper.
Allow the sauce to simmer over low heat for about 15-20 minutes, occasionally stirring. Remove it from heat and set it aside.
Assemble the Pizza:
Preheat your oven to 220°C (430°F).
Grease a deep-dish pizza pan or a cast-iron skillet with olive oil.
Press the proofed dough evenly into the bottom and up the sides of the pan to craft a crust.
Arrange half of the mozzarella cheese at the base of the crust.
Spread the cooked Italian sausage, diced tomatoes, green bell pepper, onion, minced garlic, chopped basil, and 1 tsp of dried oregano evenly over the cheese.
Season the toppings with salt and pepper.
Pour the prepared tomato sauce over the pizza toppings.
Sprinkle the remaining mozzarella cheese on top.
Position the pizza in the preheated oven and bake for 25-30 minutes or until the crust turns golden brown and the cheese becomes bubbly and slightly browned.
Allow the pizza to cool for a few minutes before slicing.
Serve the pizza while hot and savor your homemade Chicago-style pizza!
