Boondi Ladoo is a popular Indian sweet made from chickpea flour pearls, blended with sugar, nuts, and fragrant spices. These round treats are loved for their delightful crunch and aromatic sweetness, often enjoyed during festive occasions.
In a mixing bowl, combine the gram flour with water to make a smooth batter.
Heat ghee in a deep frying pan over medium heat.
Using a perforated spoon or a slotted ladle, pour small amounts of batter into the hot ghee, allowing the droplets to fall into the oil and form tiny boondi balls. Fry until they turn golden brown. Remove and drain excess oil by placing them on a paper towel.
In a separate pan, prepare the sugar syrup by dissolving sugar in water over medium heat. Stir continuously until the syrup reaches a one-string consistency.
Add the cardamom powder and mix well.
Combine the fried boondi and chopped nuts in a large bowl.
Pour the hot sugar syrup over the boondi and nuts mixture. Mix thoroughly until well combined.
Allow the mixture to cool slightly until it is warm enough to handle.
Take small portions of the mixture and shape them into round ladoos using your hands.
Once shaped, allow the ladoos to cool completely before serving.
