600 g Potatoes washed and diced into bite-sized pieces 2 tbsp Olive Oil 1 Lemon zest and juice 1 tsp Black Pepper 1 tsp Sea Salt Parsley fresh finely chopped, for garnish (optional)
Preheat the oven to 200°C (180°C fan-assisted).
In a large bowl, toss the diced potatoes with olive oil, lemon zest, black pepper, and sea salt until evenly coated.
Spread the seasoned potatoes in a single layer on a baking tray lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, stirring halfway through.
Once cooked, remove from the oven and drizzle with lemon juice.
Transfer the lemon pepper potatoes to a serving dish, garnish with fresh parsley if desired, and serve hot.
