Garlic roasted potatoes are a flavour-packed, golden-brown side that’s crispy on the outside and fluffy inside. Perfect for family meals, gatherings, or weeknight dinners.
Preheat your oven to 200°C (fan-assisted) or 220°C (conventional).
Place the potatoes in a large saucepan and cover them with cold water. Add a pinch of salt, bring to a boil, and simmer for 5 minutes. Drain and let the potatoes steam dry for a minute.
Transfer the potatoes to a large baking tray. Drizzle with olive oil, then sprinkle the minced garlic, sea salt, and black pepper evenly over the potatoes. Toss to coat thoroughly.
Spread the potatoes out in a single layer on the tray, ensuring they don’t overlap for even roasting.
Roast in the oven for 35-40 minutes, flipping the potatoes halfway through, until they are golden and crisp.
Remove from the oven, garnish with fresh parsley if desired, and serve hot.
