Gajrela

Gajrela is a popular Indian dessert recipe often served at weddings. Carrots are finely grated before being simmered in milk and then sweetened with sugar. Serve hot with a scoop of vanilla ice cream.

Ingredients
  

  • 50 g Butter
  • 1 kg Carrots
  • 100 g Sugar
  • 200 ml Milk
  • Cashews
  • Almonds
  • Pistachios

Instructions

  • In a pan melt the butter on low heat
  • When the butter is melted add the grated carrots and cook for 15 minutes
  • Add the milk and cook for 15 minutes until the majority of the milk dries up
  • Add the sugar and cook for a further 10 minutes
  • Garnish with cashews, almonds, and pistachios then cook for a few more minutes and remove from heat
  • Enjoy immediately with a scoop of vanilla ice cream!
