Gajrela
Gajrela is a popular Indian dessert recipe often served at weddings. Carrots are finely grated before being simmered in milk and then sweetened with sugar. Serve hot with a scoop of vanilla ice cream.

50 g Butter 1 kg Carrots 100 g Sugar 200 ml Milk Cashews Almonds Pistachios
In a pan melt the butter on low heat
When the butter is melted add the grated carrots and cook for 15 minutes
Add the milk and cook for 15 minutes until the majority of the milk dries up
Add the sugar and cook for a further 10 minutes
Garnish with cashews, almonds, and pistachios then cook for a few more minutes and remove from heat
Enjoy immediately with a scoop of vanilla ice cream!
